			<content:encoded><![CDATA[<p>I&#8217;ve admitted to not being much of a jam eater.  This can make the process of putting up jars and jars of jam in the summer a bit silly feeling.  </p>
<p>That is until these cold crisp sunny wintry mornings when one of those jars gets snapped open.  </p>
<p><img src="http://www.browniepointsblog.com/wordpress/wp-images/2010/02/jam.jpg" title="chocolate raspberry jam" alt="chocolate raspberry jam" class="imgright" height="400" width="267"/>Or until they are handed out as Christmas or winter birthday presents.</p>
<p>Or until the lid is pried off and you discover a layer of chocolate to crack through like the sugar hat of a creme brulee.</p>
<p>Lets chalk this chocolate jam trick up to one of the many lessons learned from <a href='http://www.powells.com/partner/29389/biblio/9780870136290?p_isbn' title='' rel='powells'>Christine Ferber&#8217;s Mes Confitures</a>.  Stirring in 250g of chocolate to a 1 kg fruit batch of jam is mentioned in several of her chocolate jam recipes.  My experiments indicate that doubling this amount of chocolate is all good too, especially as the chocolate seems to visually disappear as it is added to your hot fruit mixture.  Additionally, I added a layer of finely grated chocolate to the top of the hot jam after it had been spooned into the jam jar.  This helps visually cue the jar opener to the presence of something special in this jam.</p>
<p>Adding chocolate to your jam recipe will not adversely affect the preservation of your jam.  As usual in jam making considerations- keep your chocolate clean to prevent mold contamination in your jars.  Do this by keeping your chocolate covered, use only clean sterilized tools and wash your hands before touching. </p>
<h2>chocolate jam recap</h2>

<li>In a 1 kg of fruit batch of jam, add 250-500 grams of chocolate.</li>
<p></p>
<li>Chocolate can be dark, milk or white.</li>
<p></p>
<li>Chocolate is stirred in as the very last step before adding the jam to the jars.</li>
<p></p>
<li>Additional chocolate can be added as a thin layer to the top of the hot jam just before it is lidded and heat treated.</li>
<p></p>
<li>As is usual in jam making- keep your tools clean, and in this particular case your chocolate minimally exposed to the air to prevent mold spore contamination.</li>

But that&#8217;s beside my point for this post.</p>
<p>While these bags are very handy: compact, easy to fold up, hold a large volume of groceries, fit over the shoulder and don&#8217;t drag on the ground when straight armed&#8230; <em>they have one fatal flaw</em> I want my blog readers to consider:  </p>
<h3>They seem to be boy repellent.</h3>
<p>I love these bags, and am attracted to using them more than the dullsville canvas options I&#8217;ve previously tried (they never seem to have their handles in the right places).  I can&#8217;t help but grit my teeth over having bought such a <del>sexist</del> gendered item that I had mentally envisioned as an all gender loving household item.  Upon purchase, my mind had completely failed to consider the pouffiness of the bags themselves- a detail that is quite glaring now.</p>
<p>Oh well.  I will take my brash bold patterns and colors in hand. No question with these bags who brings home the bacon.</p>

			<content:encoded><![CDATA[<p>This candy piece is simply the best chocolate covered orange candy I&#8217;ve ever had.</p>
<p>The label includes the words naranja and caro.  Unfortunately I can&#8217;t find them online, you&#8217;ll have to take my word  for it.</p>
<p>Our local grocery store sells them next to the expensive cheeses for 39 cents a piece (Eugeneans: buy them from the Franklin PC!  The bloated PC on Willamette is selling them at a 30 cent mark up&#8230;yuppie tax?).  </p>
<p>This is a candied segment of orange covered in tempered chocolate.  The inclusion of the whole orange rather than just the peel makes this a softer and fruitier flavor than just a coated candied peel.  It&#8217;s like a non-bitter orange marmalade in side -soft and syrupy.</p>
<p><a href="http://ideasinfood.typepad.com/ideas_in_food/2007/03/pressured_cooke.html">Aki and Alex of Ideas in Food</a> have recently discovered the joy of pressure cooking whole citrus.  The resulting fruits can be eaten whole and are tender, not the least bit bitter.  </p>
<p>I wonder if candying orange already accomplishes this, or maybe the candying process could benefit from starting with pressure cooked fruits?</p>
<p>Aki and Alex&#8217;s whole citrus discovery makes me want to replicate this candy on a larger scale: using blended whole oranges as an ice cream or pudding base?  Or whole oranges processed into a ganache like consistency with marzipan and covered with tempered chocolate?</p>

<p>I see an immediate need to use these for my lunches at work, and am curious how else they would fit in my habits.</p>
