My batch just reached the ripe old age of 3 weeks yesterday, so I froze and strained it. It was beyond terrible. No one got sick, but no one could finish more than a sip or two. We also took a bite of the pickled bacon - HUGE mistake. I threw it in the garbage disposal. The garbage disposal was all "OH HELLS NO" and started power barfing all over the floor. The floor started dissolving and since this was 12 hours ago, by now there should be a pissed off family in mainland China wondering why pork-flavored sludge is bubbling up through the bottom of their basement.
