With a special meal on Fat Tuesday!
Tomorrow, Sweets and I are heading out to a Eugene underground restaurant (that just sounds so spicy!), where a celebrated pair of chefs will whip us up a meal to remember:
- Oysters two ways: Chilled with house made Cocktail Sauce and Oysters Rockefeller
- Salad with Crab Beignets
- Crawfish Pie
- Smoked Pork Tenderloin with Braised Greens
- King Cake
I’ve been eating good all day in anticipation of tomorrow’s break from my diet.

White Bean Purée with Polenta Crackers
The smokiness of the bacon permeates the beans without actual bacon pieces being present in the dip. Creamy smooth, garlicky (I love that word!) with hints of smoky bacon and chile spice, I imagine this dip would serve well as a concentrate for instant soup too.
