I’ve previously mentioned my need to scrounge up cooling racks after Sweets put mine to use keeping his laptop from overheating. Using chopsticks to elevate my cooling bread works well for large surface area items. This time around I was stymied by the need to cool muffins.
With a dozen blueberry persimmon muffins (using Elise’s great muffin recipe) anxiously waiting, I realized my splatter screen would work perfectly as a cooling rack! I placed it over my cast iron skillet, and it magically held exactly 12 muffins. Cool!
