I love potato pancakes topped with sour cream and applesauce.
The combination of sweet with savory is just spectacular to my taste buds. Adding a touch of creamy sour cream smoothness helps all the flavors play nice together- acting like a recess monitor.
So it makes complete sense to stir in a spoonful of applesauce with my potato leek soup and top it with sour cream!
I think potato pancake lovers will agree…

Genius. I’ve been looking a a bunch of potato leek soup recipes in prep for Thanksgiving, but it seemed they were missing something. I often mentally put the flavors together as I read a recipe, if you know what I mean. With the addition of the applesauce and sour cream it all now adds up. Great.
