Oh my god – I can’t believe I found your blog today. I have used beet powder and also other herb powders to colour cupcake frosting, and ever since I saw the Barefoot Contessa show where she made her own marshmallows, I thought – wouldn’t it be cool to colour them like the frosting. WOW! I am totally inspired by your creations, especially the peppermint swirl ones – maybe you could try using beet instead of red food colouring (I have a “thing” about food colouring as a holistic nutritionist!)? When I use the powder for the frosting, I flavour it with peppermint, so you don’t actually taste the beet. Here is a sample of my little herbal cupcakes…
