Back in July, before leaving for Japan, I wrote a bit about showing Sweet’s co-workers how easy and good homemade rice crispee treats can be. He had reported to me a stunning story about a co-worker buying rice crispee treats from a vending machine… can you imagine? Shaking my head…
Soon after that post, Portland confection maker, Stephanie Liefeld of Portland Truffle, contacted me regarding trying out a sample of her new gourmet rice krispee treats.
She sent us two flavor samples that Sweets and I couldn’t help but gobble right up. One studded with cocoa nibs, one stripped with chocolate on top- the time flavor researching these recipes was clearly evident in the nibbling!
These bars were a nice contrast of textures: crispy rice with crunchy nibs, surprising layers of ganache like chocolate running through the center. Also striking was the perfect level of saltiness to pair with the not-too sweetness of these treats.
Sweets and I were both pleasantly surprised to find these treats retaining their familiar homemade flavor in a gourmet context without disturbing surprise flavors that often spring up when larger scale productions tackle a very familiar food.
Keep your eyes open for these great treats next time you are seeking a coffee hit in the Portland Pearl District.
