I was happy to relocate my favorite vinegar supplier in Eugene, Susanna’s Vinegars. She had a table at the side wing of the Holiday Market, a location I only discovered on the last day of the market!
The vinegar table ended up being an example of buying for myself when also shopping for others. Susanna’s display of bottles is always invigorating as she revels in the use of interesting shapes and presentations. All that in additon to great flavors!
In this latest swoop I picked up a small pyramidal bottle of Apricot Chili vinegar. This is a new flavor for me, as I was seduced by the plump apricots tumbled in the golden liquid. I’m looking forward to deglazing pan fried chicken with this wonderful concoction.
I also bought a large fish shaped bottle of Garlic Spice Vinegar with a smaller bottle of beautifully arranged chili’s layered to create Chili Vinegar. I grew up with chili vinegar in the house- which we would drizzle ontop of steak. Both of these vinegars are great drizzled on hearty winter greens, beef stew, and chilli as a finishing seasoning touch.
I’ve been so entranced by these submerged vinegars I haven’t even restocked on Susanna’s flavored balsamic vinegars. They range from spice touched, to citrus and fruit flavored.
I hope to catch her again this spring when the Eugene Farmer’s Market opens back up.

I’ve had various vinegars, and chili-infused oil, but not chili vinegar. Sounds wonderful. On a steak–my mouth is watering. Let us know how the apricot-chili tastes on the chicken.

Interesting that you grew up having a chile vinegar at hand. My introduction to this addiction came from a cajun lady from New Orleans who had invited me for a chicken soup lunch. Sitting next to salt and pepper on her kitchen table was a bottle of vinegar infused with beautiful tiny peppers from her backyard garden. Vinegar has such benefits for our health (ala Bragg Natural Apple Cider Vinegar) as do chie peppers. But oh, that kicky excitement that it adds, healthy or not is just plain fun.

I like them for decorations……I normally have my own spice mixes….I create on the spot depending on what I’m cooking.
