Here’s a great extra credit assignment for kitchen geeks… making baked goods out of unsuspecting base ingredients.
I can’t remember my inspiration, most likely just contemplation of rummy goodness… adding flour to hot buttered rum mix equals great cookies!
Hot Buttered Rum Cookies
With a mixer combine:
- 1/3 cup hot buttered rum batter
- 1/3 cup cake flour
- 1/4 tsp baking powder
- 1 Tbs rum
Beat till ingredients are combined and look cookie-doughy.
Scoop out into small balls and roll in cinnamon sugar.Bake 350F for 13 minutes.
This recipe using 1/3 cup of batter yields 7 petite cookies.
