I stumbled across your website when I did a search on our websites name - Jaya Teas. After reading your blog, I wanted to answer your questions:

"tippy" - When the tea has a lot of tips in it, it is classified as tippy. Tippy tea is more expensive then one without tips. Reason is - tippy tea tends to be more aromatic and more delicate, while tea from a mature leaf is a bit more bolder - astringent. Of course, if the tea planter were to only produce tippy tea they would not have much tea, which is also why tippy tea gets to be expensive.

Assam tips are golden and Darjeeling tips are usually silver. So if some one shares a Darjeeling with a lot of golden tips in it, well, it may not be Darjeeling tea!

Read more about the teas here:
http://www.jayateas.com/about_tea/about_tea.html

"Pekoe" is a similar definition - but refers generally to larger leaves around the bud. You can read more about it here:
http://en.wikipedia.org/wiki/Orange_Pekoe

Enjoy!

I would highly recomend trying to get your hands on a copy of Alton Brown's Good Eats episode on tea. He goes through everything you never knew (orange pekoe refers not to an orangey-flavor but to the size of the dried leaf: pekoe being the best). Also I recommend "Everything you ever wanted to know about food but were afraid to ask" it's a little paperback that answeres some of the most elusive questions every foodie should know. It's like a fun Larouse Gastronomique, and it taught me why white cream sauce is called Alfredo sauce.

Oh yeah, that's right... we have the Alton episode, as we are currently getting our hands on a copy of all of his shows. I think I watched the tea edpisode in an Alton binge, and dosed off half-way through. I know, sacrilege...

I haven't heard about "Everything you...". I sounds similar to the What Einstein Told His Cook books. Fun stuff.

This was a wonderful thing to read as I started off my morning with a cup of tea. I am letting the leaves steep in a cute tea steeper, but i made it in traditional english fashion, milk and sugar. I don't think i have every had a pedigre tea before, and from what you describe, it sounds like something that would be worth it.
