Our local paper ran an article in the Food Section about a Eugene woman who prepares an annual Irish Dinner to celebrate more than beer at St Patricks Day. This year, Betty Speck is serving up:
- Mushroom Soup Chanterelle with pratie oaten (potato and oatmeal) wafers
- Stewed Beef With Sippets, a recipe dating to 1666 (Sippets are pieces of soda bread used in place of utensils.)
- Carrot and Parsnip Puree
- Baked Onions
- Cold Tomato Soufflé
- Irish Whiskey Cake
- Sproutin’ Potatoes
These potatoes are the cutest and most inventive dish- classic chocolate truffles, yet studded with pinenuts and dusted with cocoa, and served up to resemble miniature potatoes.
