Well, you’ve got to hand it to the South. I figure if cooking up a pot of Black Eyed Peas gave them enough new year luck to get Shrub back in the White House, then there’s got to be something to this Black Eyed Pea thing. Not wanting to jinx any spirits that badly again, I made up a big batch of Peas and Collards. They may not take a pretty picture , but they do go down nicely.
I didn’t re-invent the wheel on this one. I used recipes found on epicurious:
- Collard Greens with Red Onions and Bacon, a nice combination of sweet and tang. If you want plenty o’ pot juice, double the wet stuff.
- Hoppin’John, made with proscuitto instead of kielbasa, and home made vegetable broth.
