One of my favorite liqueurs in our collection is our bottle of Limoncello, thick and syrupy sweet, its perfect drizzled on vanilla ice cream, or spooned into tea. We’ve had a surprising number of people ask about it when at our house, never having seen this luxury before. I decided to try my hand at making a bottle of the good stuff for Mom…
Bottle of Sunshine
Steep:
- one quart of vodka
- rind (no white pith) of 4 lemons
- rind (no pith) 2 limes
allow to sit in a dark place for 2-4 days, shaking several times to stir up the goodies.
An alternative to steeping:
Combine one quart of vodka with 1/4 tsp of lemon essential oil, and 1/8 tsp of lime essential oil. Essential oils can be found in your local “health food” store. They come in many plant and fruit varieties. Another nice flavored liqueur flavor to try would be grapefruit or lemongrass.Make a honeyed simple syrup made by heating:
- three cups water
- one cup sugar
- 1/2- 3/4 cup honey
don’t allow the mixture to boil when heating. Stir over medium heat until the sugars are dissolved and the syrup is clear. Cool.
Combine the steeped vodka, strained of fruit rinds, with the simple syrup cooled to room temperature. Pour into a clean dry bottle and cork.
Enjoy
