What’s a Cacao Nib?

cacao nibsCacao nibs are a cute little specialty item in the world of food particular people. Ahem, that would be us! They are roasted cocoa beans that have been removed from their husks and broken into bits.

The first cooking application for them I ever saw was on Food Network’s Easy Entertaining with Michael Chiarello. It was show focused on composing a dinner that had chocolate in every dish. Michael Chiarello used the cacao nibs as a topping for their first coarse salad.

Where can you find them? I bought mine locally at our “hippy” grocery store, Sundance Natural Foods. They are also available online, through Scharffen Berger.
